Debating whether to do a 6.5" with a 5.24" or 4" along with a tweeter in my door pods or just go with a 6.5 and tweeter in the door pods? Does the smaller mid-high range really do anything? I have Hertz 165 hsk's already so I don't know if adding a higher midrange will matter?

It really depends on the car and the install. One of the largest benefits on a 3-way setup is that it allows you to mount the midrange further forward by using kickpanels or a dash mount, minimizing "path length differences"... the further forward you place both speakers the less of a difference in distance from your ears between them, which means less time delay is needed etc.
It also allows you to properly aim them for ideal imaging which is impossible (or much harder) with 6.5" drivers.
However in some cars a 2-way setup in stock locations may already have a great image and sound and won't benefit "as much" by going 3-way.

another benefit is it allows you to run a higher tweeter crossover point, which can greatly improve your sound stage if you can get the midrange to play the entire vocal range.
