In car audio it's commonly said "you get what you pay for." With that being said there's tons of good units out there, it's just how much you're willing to spend on what features and quality of certain parts inside the head units.
I recommend looking at the list of manufacturers at the bottom of this page. http://central.sounddomain.com/sd/features/cd_mp3_players_type.htm
The quality of the speakers, amplifiers, wiring, electrical system, installation all determine the overall quality of the sound output. The quality is usually limited by the weakest component.
Check out http://www.crutchfield.com and post back with questions. You need to figure out a price range for more specific answers. Eclipse is known for making some of the best sounding units. Alpine is a long running premier brand. From there the other brands also make comparable units.

How much you willing to spend and what features are you looking for in a head unit. Like gibby said, eclipse, alpine and pioneer are probly the best 3. The last 2 head units i have bought were pioneers and i got them cheap on ebay used but in like new condition and work perfectly. Thats if you dont mind used, i dont as long as they work, lol. But yea those 3 brands are good.

Step #1- decide on your budget Step #2- determine what features you need Step #3- search the internet for products that fit your needs Step #4- buy it!!!
i am a personal fan of pioneer, which there are many that can be had cheap with plenty of features. i also like alpine headunits, though it seems to me for the money, pioneer usually has better features.

If you go with a pioneer I would get one from the premier line, there still priced reasonably well, and I think the sound quality is better that the standard pioneer.
